Pork Chop Cranberry Saute

Ingredients

  • 1/4 teaspoon dried thyme leaves
  • 1/4 teaspoon salt, divided
  • 1/4 teaspoon freshly ground pepper, divided
  • 4 boneless pork loin chops, (1-1 1/4 pounds), trimmed of fat
  • 2/3 cup cranberry juice cocktail, or orange juice
  • 2 1/2-3 tablespoons clover or other mild honey
  • 2 teaspoons olive oil
  • 1/4 cup chopped onion
  • 1 cup cranberries, fresh or frozen, thawed, coarsely chopped

  • 1/4  teaspoon grated lemon rind
  • 1  tablespoon fresh lemon juice
  • 2  teaspoons capers, rinsed and drained

Cider-Roasted Chicken

  • 1  quart apple cider
  • 1/4  cup kosher salt
  • 1  tablespoon black peppercorns
  • 1  bay leaf
  • 1  (6-pound) roasting chicken
  • 2  cups apple cider
  • 1  large onion, peeled and halved
  • 4  flat-leaf parsley sprigs
  • 4  garlic cloves, peeled

  • 1/4 cup sliced almonds, toasted
