Not Your Standard Sammie

This is the first school year I have had to make lunches for the kiddos and I actually really love doing it. As a child, I always looked forward to seeing what little surprises my own mom would pack for me. Because they are eating lunch at school and not at home with me, I have more latitude in my preparations. I know for a fact they won’t complain to their teacher like they would for me. It’s a perfect opportunity to introduce or re-introduce new food choices. Put away the standard peanut butter and jelly and give these versions a go…

Veggie Cream Cheese & Cucumber Slices



Almond butter with slivered almonds and dried cranberries


Blueberry Cream Cheese & Strawberry Slices


Hummus & Chopped Bell Peppers


Apple Butter & Apple Slices


Tuna Salad & Tomato Slices


Whipped Cream Cheese & Blueberries

    The cucumber sandwhich is my husband’s absolute favorite. His mom spoiled him with these as “after schoo” snacks. A lot better than a bag of chips, for sure. That’s why he still looks hot and fit! Hot and healthy…just not a mom, lol :P )

    Do you think these sandwiches would best be served to kids attending school or homeschooled kids? Do they digest food the same way? :)

    I think they likely digest the same way :) What I would hope is better served to homeschooled children, after reviewing previous comments, is a lesson in tolerance and an understanding that people may have opinions that differ from their own and that’s OKAY! Life would not be vibrant with out debates, opinions, and the civil liberties to exercise different points of view. Can’t one just agree to disagree?
